Sweet Potato Fries


Level of Difficulty: Easy
Serves: 6

I attended a potluck many years ago, where a friend of mine prepared these amazing Sweet Potato Fries.  These Sweet Potato Fries are highly addictive and naturally gluten free. They have an excellent combination of Sweet and Savory. I enjoy spicy food, but the level of spice may be controlled by adjusting amount of cumin used in the recipe. They are also great with mayonnaise based dipping sauce. 


Sweet Potato Fries - Ready to go in the oven.

Makes ~6 servings where each one has approximately:
 157 Calories,  32 g Carbs,  3g Fat,  3g Protein


Sweet Potato Fries

2 poundsSweet Potatoes
1 tExtra Virgin Olive Oil
1 tSalt
1 tSugar
1/4 tFresh Ground Pepper
1/4 tCumin


Directions:
    1. Pre-heat the oven to 425 F.

    1. Peel the Sweet Potatoes and cut lengthwise into 1/2' wedges.


    2. Put the Sweet Potato into a large bowl bowl and add the Olive Oil, Salt, Sugar, Pepper, and Cumin. Toss to coat the Sweet Potato.  The amount of cumin may be adjusted to taste.

    3. Spread on a foil lined baking sheet. 


    4. Bake in the oven at 425F till golden brown, approximately 30 minutes.

These are a great side dish. They are also good served with a mayonnaise based dipping sauce. They do not reheat or keep well after they have been cooked.
